Fishy Sweet Potato Balls
My minis love eating salmon, but they have never been big fans of other types of fish (apart from the good ol' fish 'n' chip shop variety!). So I am always on the lookout for easy fish recipes that get their tick of approval, and this was one of them.
The recipe I found was made the conventional way, but I was able to make it in my Thermomix so have included both options.
Ingredients
250g sweet potatoes, unpeeled cut into cubes
225g saddleback snapper, roughly chopped
1 egg, beaten
1/4 tsp salt (optional)
Method:
Conventional
Step 1. Put sweet potato in a steamer and steam, covered, over boiling water for 10 minutes until beginning to soften.
Step 2. Add the fish and continue steaming for a further 5 minutes until the fish is just cooked and the sweet potato is soft.
Step 3. Preheat grill to medium-high.
Step 4. Transfer the sweet potato and fish to a bowl and roughly mash with a fork until the mixture combines. Mix in egg and salt, the mixture will be sticky.
Step 5. Using 2 teaspoons, scoop portions of the mixture onto a baking sheet.
Step 6. Grill for 4-5 minutes on each side until lightly browned and warmed through.
Serve warm.
Thermomix
Step 1. Place sweet potato in Varoma and steam for 12 minutes. Place fish pieces on tray of Varoma and steam for 4 minutes, with sweet potato.
Step 2. Then place all ingredients into mixing bowl for 30 seconds, speed 4.
Step 3. Follow steps 3-6 above
