Easy Creamy Cauliflower Soup

Being a self-confessed clean freak, one thing that puts me off preparing complicated meals (probably not what you thought you would hear a Dietitian say), is the mess that is created in the process. My Thermomix has come to the rescue, and allowed me to experiment with new recipes and creations, whilst keeping the mess at bay!

One dish that I find so easy to prepare, time and cleanliness wise is soup. I had a whole cauliflower in the crisper that needed be used before we headed off on a mini getaway and found this recipe on Pinterest which was created by Thermobliss. I did adapt it slightly, the original recipe included bacon which I do not eat, and parmesan cheese which I didn't have in the house, and at the time of cooking I could not be bothered bundling the minis into the car to pick some up from the supermarket.

Regardless of this, the recipe is still super easy and quick to make and still very yummy. And the best bit, the minis, particularly my eldest loved it and there's nothing more satisfying than fresh homemade meals created with minimal mess!

Easy Creamy Cauliflower Soup

Preparation time from beginning to ready to serve 30 minutes

Fills the tummies of 4-6 humans

Ingredients

1 kg cauliflower, chopped into florets

850 g vegetable stock (I used stock that I made in my Thermomix)

Sea salt and pepper to taste

20 g butter


How to Create

Step 1. Preheat oven to 200 degrees celsius.

Step 2. Place the chopped cauliflower and vegetable stock into the TM bowl.

Step 3. Season with salt and pepper.

Step 4. Cook for 25 minutes, 100 degrees, Speed 1.

Step 5. Add the butter to the TM bowl.

Step 6. Puree on Speed 8 (slowly increasing) for 2 minutes or until completely smooth and creamy.
