Crunchy Roasted Chickpeas

Legumes are packed with fibre, protein and iron and can be used in a variety of ways to fill up our tummies! Chickpeas are on the top of my list to use as an ingredient in snacks (see also my Hummus recipe) because they are easy to prepare and tasty, and more importantly the minis love them too.


Roasted Chickpeas are a great snack for Mamas following an elimination diet that does not include legumes.


Ingredients

  • 1 (400g) tin chickpeas rinsed and drained.

  • 2 tablespoons olive oil

  • salt, optional

  • cayenne pepper, optional

How to Create


1. Preheat oven to 230 degrees C.

2. Pat chickpeas dry with kitchen paper. In a bowl, toss chickpeas with olive oil and season to taste with salt and cayenne pepper.

3. Spread on a baking tray and bake for 30 to 40 minutes until browned and crunchy. Watch carefully the last few minutes to avoid burning.
