Hummus Makes Me Happy
I am a big fan of chickpeas, as they are full of protein, iron and fibre and can be used to make a variety of snacks. Breastfeeding mamas tend to feel hungry often, and even more so if they are undertaking an elimination diet as they have had to exclude certain food groups.
Hummus is a great snack to keep you feeling fuller for longer and comes with the added benefits of its nutritional qualities. It is also so easy to make which is important for busy mums. Hummus can be paired with vegetable sticks, rice or wholegrain crackers or in a sandwich.
This snack is perfect for mamas following an elimination diet that does not include legumes or sesame.
Ingredients
400g tin chickpeas, drained and rinsed
2 Tbsp tahini
Juice of 1/2 lemon (or to taste)
1/2 Tsp ground cumin
1/4 cup of extra virgin olive oil
How to Create
1. Place chickpeas, tahini, lemon juice, cumin, into food processor and blend until well combined.
2. Gradually add oil and blend until smooth.
